TECHNICAL DATA

Plot: several plots of the terms of Pozaldez, La Seca and Rueda.

Variety: 100% Verdejo.
Vineyard age: between 5 and 45 years.

TASTING NOTE

Color: Straw yellow with greenish reflections, clean and bright.
Aroma: clean and high intensity on the nose, appearing varietal aromas of Verdejo such as fennel, freshly cut grass mixed with aromas of apple, pear and tropical notes of mango and pineapple.
Palate: very complex, with a good balance between acidity and bitterness, sweet, with hints of the fruit that appears on the nose. Very long in the mouth.

ELABORATION

Destemmed-crushed with light pressing to extract the yolk must.

The settling is co-assisted with cold to pass to an alcoholic fermentation at low temperature (never above 15 ºC) for 3 or 4 weeks.

Subsequently, it is racked to remove the coarse lees and work the fine lees for several months, rich in mannoproteins that will provide complexity and structure in the mouth, which will give an elegant final touch.
